Ingredients:

  • 1 cup bulgur wheat
  • 1/4 cup olive oil
  • Juice of 2-3 lemons
  • 1 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 3 green onions, thinly sliced
  • 3 tomatoes, diced
  • 1 cucumber, diced
  • 1 tsp salt
  • 1/2 tsp pepper


Instructions:

  1. Place the bulgur wheat in a bowl and cover with water. Let soak for 20-30 minutes until softened. Drain well and squeeze out any excess water.
  2. In a large bowl, whisk together the olive oil, lemon juice, salt and pepper.
  3. Add the drained bulgur wheat, parsley, mint, green onions, tomatoes and cucumber. Toss to combine.
  4. Taste and adjust seasoning if needed, adding more lemon juice, salt or pepper as desired. You want a lively flavor.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to blend. Serve chilled.


Tips:

  • Use a fine bulgur wheat for tabbouleh rather than a coarse grind.
  • Chop the parsley and mint leaves finely into tiny pieces for an authentic tabbouleh texture.
  • The vegetables should all be very small diced or finely chopped.
  • Chill the tabbouleh for best flavor. Serve as a side dish or eat with pita bread.
