Recipe for traditional Lebanese tabbouleh
Ingredients:
- 1 cup bulgur wheat
- 1/4 cup olive oil
- Juice of 2-3 lemons
- 1 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 3 green onions, thinly sliced
- 3 tomatoes, diced
- 1 cucumber, diced
- 1 tsp salt
- 1/2 tsp pepper
Instructions:
- Place the bulgur wheat in a bowl and cover with water. Let soak for 20-30 minutes until softened. Drain well and squeeze out any excess water.
- In a large bowl, whisk together the olive oil, lemon juice, salt and pepper.
- Add the drained bulgur wheat, parsley, mint, green onions, tomatoes and cucumber. Toss to combine.
- Taste and adjust seasoning if needed, adding more lemon juice, salt or pepper as desired. You want a lively flavor.
- Cover and refrigerate for at least 30 minutes to allow the flavors to blend. Serve chilled.
Tips:
- Use a fine bulgur wheat for tabbouleh rather than a coarse grind.
- Chop the parsley and mint leaves finely into tiny pieces for an authentic tabbouleh texture.
- The vegetables should all be very small diced or finely chopped.
- Chill the tabbouleh for best flavor. Serve as a side dish or eat with pita bread.
